Pork back ribs with a dry rub of paprika, dry mustard, garlic, onion, cumin, brown sugar and a few fresh herbs that marinate overnight and then are grilled on a low flame

BBQ Chicken Thighs
Marinated in a homemade vinaigrette overnight and then grilled

Macaroni Salad
Using my mother-in-law’s old family recipe – with a marinara based sauce

Broccoli Salad
Chopped broccoli, red onions, green onions, cashews, cranberries, cheddar cheese and a sweet aoli

Mixed Green Salad
Mixed greens with red onion slices, cherry tomatoes, mushrooms, shredded carrots, homemade croutons and vinaigrette dressing

Lemon Raspberry Bars
Homemade lemon bars made with fresh lemons and raspberries

Beverages
Lemonade, Cucumber water & plain ice water, served in beverage dispensers at a station

Roma tomatoes, garlic, shallots, fresh chopped herbs, red wine vinegar & olive oil served on a homemade crostini

Greek Salad Skewers
Kalamatta olives, feta cheese, English cucumber, cherry tomato & cubed tri tip drizzled with olive oil and salt & pepper

Prawns
Marinated in a Thai Chili Sauce overnight then grilled and topped with lime juice and cilantro.

Cheese Station
Assorted cheeses (Gouda, Sharp Cheddar, Bleu Cheese and Goat Cheese topped with Habanera jelly) served with grapes, nuts, dried fruit & assorted crackers.


 

Wedding Dinner


Mixed Green Salad
Mixed greens with red onion slices, cherry tomatoes, mushrooms, shredded carrots, cucumber, homemade croutons and vinaigrette dressing

Grilled Chicken Breast
Chicken breast marinated overnight in Dijon vinaigrette then grilled and served with a cilantro sauce

Pork shoulder that is dry rubbed for 8 hours minimum and then slow cooked with roasted Poblano peppers, jalapenos peppers, onions, garlic and tomatillos plus a few herbs.

Pinto Beans
Cooked with bacon, onions, and jalapeno

Spanish Rice
White rice with tomatoes, onions, celery, carrots and herbs.
